Utensils Required:
Large Cooktop Frying Pan with Lid/cover
Stirring Spoon
Ingredients Required:
1.5lb to 2lb of Kielbasa Sausage
2.5 to 3lb of Red Potatoes
3 Large Sweet Peppers - 1 yellow, 1 red, 1 orange
1 Medium to large sized sweet onion
How to Make it:
1) Peel the red potatoes.
2) Slice the red potatoes into 1/8 inch to 1/4 inch discs; cut them in half if they're particularly large.
3) Put them in the frying pan and set the cook top temperature to a low temp.
4) Cut up the sweet peppers as desired. Add to the potatoes and stir.
5) Slice the sweet onion as desired. Add to the potatoes & peppers and stir.
6) Slice the kielbasa as desired - typically in 1/2 inch slices then cut in half again. Add to the potatoes, peppers, & onion and stir. Cover the frying pan with a lid and raise the cook top to medium heat levels.
7) Leave covered and stir every 5-10 minutes.
8) Continue to stir and cook for about 30-40 minutes. When the potatoes are easy to break in half with the stirring spoon, it's ready. You may want to drain the pan about half way through the cooking cycle if desired.
Story:
Why is this called Sutton Sausage? Simply put - we didn't have a different name for it. Some dear friends introduced us to this recipe in the early 2000's without giving it a name. Our whole family loves it and we needed a name for it, so Sutton Sausage just seemed to fit.
