Ingredients Required:
1/2 Tsp Onion Powder
1 Tsp Dried Basil
1 Tsp Dried Thyme
1 TSp Paprika
4 Tbsp Cup Olive Oil
1/3 Cup grated Parmesan Cheese
1/4 Tsp Salt
1/4 Tsp Pepper
1/2 Large Yellow Onion
1 package of Kielbasa Sausage
1 lb Baby Read Potatoes
8 Oz Petite Baby Carrots
Small package of frozen Brussel Sprouts
How to Make it:
1) Preheat oven to 400 degrees.
2) Line pan with Tin Foil or Parchment Paper.
3) Cut the baby red potatoes in half.
4) Mix together basil, thyme, oregano, paprika, onion powder, salt, pepper in bowl.
5) Place red potatoes and carrots on sheet pan.
6) Power 2 Tbsp of olive oil and half the seasoning mix on top. Toss to combine and place in oven for 20 minutes.
7) Thinly slice 1/2 the yellow onion (1/4-in thick slices).
8) Halve the Brussel sprouts.
9) Cut sausage into 1/2-inch thick coins.
10) Remove potatoes and carrots from the oven and slide them to one side of the pan.
11) Add Brussel sprouts, sliced onion, sausage to the pan and pour the 2 Tbsp olive oil with remaining spices mixture over the top.
12) Toss and mix all ingredients and spread evenly in the pan.
13) Back another 10-25 minutes until Veggies are roasted as desired.
14) Sprinkle grated parmesean cheese across the top and serve.
